A fine example of Cabernet Franc, this wine shows extraordinary aromatic purity, expressing white pepper, green pepper and spicy notes highlighted by mineral overtones. The grapes were placed in cement 'egg shaped' fermenters to allow fermentation to take place spontaneously with native yeasts. The egg shape of the fermenter facilitates vinification without the need for numerous pump-overs to extract components, as the contents are constantly moving allowing a gentler process.
