A lighter style of red, and close to Pinot Noir in a way, but with a little more structure, vibrance, and tannin. Vibrant red fruit aromas, touches of lavender, and Mediterranean herb. There is also a chalkiness to the palate. A very well made, dry, and classy Spanish red that is pure and modern.
Sus Scrofa means wild boar in Latin, the animal that makes its home in the hills of the Alt Penedès, and is the emblem of Celler Pardas.
Celler Pardas is part of the new generation of producers in Catalonia focussing on their terroirs and indigenous grapes such as Xarel.lo, Macabeo and Sumoll. The project began in 1996 when local winegrowers Ramón Parera and Jordi Arnan bought the Can Comas estate in Alt Penedés. They farm organically without irrigation. Sumoll is the star of the reds, the freshness and long ripening cycle perfectly suits the area.
The wine is deliciously unfiltered and does have a little sediment, so best to decant before serving!
